Baking Rice

I'm not good at cooking rice for some reason. It never comes out right. I've always wanted a rice cooker but that's a whole nother appliance I don't have room for and it costs money I don't have. I also make a lot of rice at once cause I use it for other meals that week and I often make some kind of grain to eat with veggies for my lunches and such. One day I was watching Alton Brown and he taught me how to bake rice. I've been doing it even since, comes out perfect every time. It's also very easy to do. It does take longer though but that's ok with me.

Spray an appropriate sized baking dish with cooking spray add rice, water (use the 2 to 1 ratio brown rice requires more water, use ratio on pkg) I use a few drops of olive oil but you can use a TBSP of butter or margarine or whatever. Salt and pepper if you want. You can also use stock for more flavor. Eventually I will be posting about veggie stock and other stocks so be on the look out for that.
Cover tight with foil. Center rack, bake @ 325-350 for an hour or a bit longer.
